What began as a family tradition dating back nearly 50 years, has become Merlinda's award-winning Blue Ribbon Chile and Salsa. Her Albuquerque, New Mexico business now ships the hot delicacy to outlets all over the country.
Merlinda's family recipe for "salsa muy sabrosa!" a zesty and full flavored chile, reflects the cultural and sensual richness of her New Mexico heritage. As a child, Merlinda and her mother learned the secrets of canning green chile at her grandmother's house. Every week after Sunday mass, the entire family cleaned, roasted, peeled and canned the chile.

Grandsons Jim and John Thomas took over the El Pinto business 10 years ago and have brought new techniques and technologies to the original recipes of old El Pinto. We specialize in flame roasted chile from the Hatch Valley. Our select chiles are grown exclusively to our specifications and we roast them the same way we have done for the last 35 years. The smell is intoxicating as we fresh flame roast our chile on the patio from July through October. Our salsa gained national recognition by winning a Scovie Award in the "Salsa Hot" category (second place).

We know you want it, but is it red, or green, or maybe both? Remember now, green, or red, we fill orders on a first come first served basis. Ordering now will insure that you will get your fresh chili/chile fix in 2007. Also keep in mind that harvesting of the world's greatest tasting chile is not under our control, but God's.
